Salvatore Fontanazza, an ambitious hotel manager and passionate chef, lives gastronomy with true dedication.

“My journey in the kitchen began early – driven by curiosity, discipline, and the desire to understand more than just recipes.

Classical training laid the foundation. Positions in Switzerland, France, Italy, Belgium, and Germany broadened my horizon – both culturally and technically. Every kitchen, every country, every brigade has left its mark.

In France I learned precision and structure. In Italy, depth and respect for products. In Switzerland, discipline and organization.

With growing experience, not only did my craftsmanship develop, but so did my sense of responsibility. I took on leadership roles early on, followed later by the step into entrepreneurship.

Since 2017, my wife and I have been running Hotel Katerberg and Restaurant Field in Lüchow together.

Today my cuisine is no longer a search – it is a conscious decision. It is the result of experience, development, and conviction. And it continues to evolve.”
